For the starter: a few words about the Chef

Chef Michał Kępiński has gained experience working for prestigious Michelin-starred restaurants (e.g. Koks in the Faroe Islands, Maaemo in Oslo). As an enthusiast and eminent expert on the fermentation process, he has been preparing tasting dinners featuring fermented foods and wild edible plants in Latvia for several years.

The list of ingredients

 

Ingredients for the MAIN COURSE (2 servings)

120 g spaghetti

2 anchovy fillets

8 black olives

2 cloves of garlic

5 capers

1 small can of chopped tomatoes

50 ml extra virgin olive oil

2 g dried oregano

½ bunch of parsley greens, salt and pepper

 

Ingredients for the DESSERT (2 servings)

200g ground curd

50g mascarpone

6g ground coffee

30g dark chocolate

6 savoiardi biscuits

50g icing sugar

10g cocoa

Cookware and kitchen utensils

Make sure you have them in your kitchen:

a large heavy-bottomed frying pan

a saucepan (about 2l)

a spatula and a noodle tong

a colander

a large bowl

a whisk

1 larger or 2 smaller ramekins for the dessert (you can also use a tall glass, bowl etc.)

a bowl, bowls, plates, teaspoons
